Chickpea Blondie

As chosen by you on Instagram! The Chickpea Blondie is a delicious afternoon treat! Just be careful on those portion sizes. Also, perfect natural snack for the little ones!

Ingredients

  • 250g (1 can) Chickpeas (or whitebeans) drained and rinsed

  • 120g Peanut or other nut butter

  • 70g 100% Maple Syrup

  • 2 tsp Vanilla Extract

  • 1⁄4 tsp Sea salt

  • 1⁄2 tsp Baking powder

  • 100g Dark chocolate or pecans, chopped

Method

  • Preheat your oven to 175oC.

  • Blend everything aside from the chocolate/nuts in a food processor until smooth

  • Line a loaf tin or small baking tray with baking paper. Pour in the mixture and flatten with the back of a spatula.

  • Sprinkle over the nuts or chocolate and place in the centre of your oven.

  • Bake for 20 minutes. Remove from the oven and leave to cool before slicing. You, are, welcome!
