Chickpea Blondie
As chosen by you on Instagram! The Chickpea Blondie is a delicious afternoon treat! Just be careful on those portion sizes. Also, perfect natural snack for the little ones!
Ingredients
250g (1 can) Chickpeas (or whitebeans) drained and rinsed
120g Peanut or other nut butter
70g 100% Maple Syrup
2 tsp Vanilla Extract
1⁄4 tsp Sea salt
1⁄2 tsp Baking powder
100g Dark chocolate or pecans, chopped
Method
Preheat your oven to 175oC.
Blend everything aside from the chocolate/nuts in a food processor until smooth
Line a loaf tin or small baking tray with baking paper. Pour in the mixture and flatten with the back of a spatula.
Sprinkle over the nuts or chocolate and place in the centre of your oven.
Bake for 20 minutes. Remove from the oven and leave to cool before slicing. You, are, welcome!
