Cauliflower Fish Pie
This is a real comfort dinner for the rest of those Winter nights. Serve with some greens and it will be a family favourite!
Ingredients
200g Salmon, diced
200g Firm white fleshed fish, diced
50g Brown onion, diced
100g Leek, sliced fine
100g Corn, kernels
200g Carrot, diced
30g Butter
30g Flour of choice
200ml Milk of choice
Salt and pepper
700g Cauliflower, chopped into florets
80g Cheddar cheese, grated
1⁄2 tsp Paprika
Method
Preheat your oven to 190oC.
Sautee the onion and leek in a little olive oil until golden. Set aside.
Melt the butter in a large saucepan, once melted add in the flour and combine together to make a roux to thicken the sauce.
Add in the milk and season with salt and pepper. Whisk with the roux until the creamy sauce starts to thicken, add more milk if it becomes too thick. You want it runny.
Add the salmon, corn and carrot along with the cooked leek and onion to a ceramic pie dish. Season well. Pour over the creamy sauce.
Steam the cauliflower until soft, add the a bowl and blend with a hand blender until smooth. Season with salt and pepper and spoon over the top of the creamy fish mixture.
Bake in the oven for 30 minutes, sprinkle with the grated cheese and paprika and bake until the cheese is golden and bubbling. Carefully remove from the oven and leave to rest for 15 minutes before enjoying.
