Tuna Nicoise Salad
A simple mid-week lunch, easy to make and packed full of proteins and veggies!
Ingredients
200g Baby potatoes, halved
100g Green beans, trimmed
2 Small Cans Tuna in brine, drained
2 Eggs, boiled and peeled and quartered
80g Cherry tomatoes, halved
30g Black olives
80g Lettuce, roughly chopped
10ml Olive oil
10ml Red wine vinegar
5g Dijon mustard
Method
I. Boil the potatoes in a large saucepan until just tender, add the beans and cook until bright green and just cooked. Drain and add to a large salad bowl.
II. Add tuna, olives, lettuce, egg and tomatoes and gently toss to combine.
III. Whisk together the olive oil, vinegar and mustard and toss through the salad
