Chickpea Burgers
As voted on Instagram, our next Tasty Tuesday are these delicious Chickpea burgers! We love to have at least 1 vegan meal a week and this filling dinner or lunch option will certainly not have you missing meat.
Ingredients
250g Chickpeas, drained and rinsed weight
50g Onion, finely diced
100g Zucchini, grated
15g Parsley, basil or coriander, chopped fine
20ml Apple cider vinegar
20g Peanut or other nut butter
0.5 tsp Cumin
0.5tsp Garlic powder
1 tsp Onion powder
Salt and pepper
50g Quick oats or quinoa flakes
2 tsp olive oil
60g Lettuce
60g Tomato, sliced
80g Avocado, sliced
300g Sweet potato, cut into chips
Method
Pre-heat your oven to 190oC. Add the sweet potato to a large tray, spray with oil. Toss, season and bake in the oven for 35 minutes, turning half-way.
Mash the chickpeas in a bowl. Add the onion, zucchini, garlic, herbs, spices, salt, pepper, peanut butter and vinegar to the bowl and mix to combine with your hands.
Shape into 3 large or 6 small patties.
Using the remaining oil fry, the patties on a bbq or in a large frying pan for 4-5 minutes on each side until golden and cooked through.
Once cooked make your burgers stacking the sliced tomato, and avocado before wrapping with lettuce leaf buns.
Add a little relish or vegan mayo if you desire. Enjoy!
Best put together just before serving.
